Situation

Beaufort County, South Carolina supports a large tourism trade with many restaurants, hotels, and golf courses. The hospitality industry typically has a large turnover of employees and in many instances; employees need no prior specialized education for employment in the industry. Many workers in the food industry have had no training in food safety and are not knowledgeable in safe food handling practices, but yet are engaged in the preparation, serving, and storing of food products.

Response

Clemson University Extension, in conjunction with the National Restaurant Association, has developed a Serving Safe Food course for food handling employees. This course has a pre-test, final exam, and diploma and includes a food safety booklet and thermometer for use on the job. Students must pass the final exam to earn a diploma. Increased awareness of contamination, critical temperatures, cross contamination, and clean hands is a major focus of the course.

Impact

Three Serving Safe Food courses were taught reaching 26 young adults who were working or about to enter the workforce and food handling employment. Diplomas were issued along with thermometers. The local restaurant inspector from DHEC has indicated to me that where several members of restaurant staff have received the Serving Safe Food training, food safety violations are reduced and graduates of the course reinforce good food safety practices.
