The aim of the project is to establish a cohesive, replicable framework for implementing a cross-disciplinary curriculum that improves the industry-readiness of graduates. Food, Nutrition, and Packaging Science (FNPS) Department sophomores participate in a two-semester undergraduate research course known at Clemson University as a Creative Inquiry (CI). The course curriculum is centered around product development with an emphasis on children’s nutrition. The first semester is lecture-based with intermittent problem-based individual and group activities. The second semester is project-based and student-led. Both sections of the course emphasize collaborative learning, the goal of which is student self-efficacy in terms of product development skills and industry readiness.
