Feng Chen - Assistant Professor, Ph.D., ( Louisiana State University ).  Primary teaching responsibilities include food chemistry (FDSC 401). Research interests are food flavor chemistry, identification, isolation and application of bioactive nutraceutical compounds from natural sources.
