What is CulinologyTM or Culinary Science?

CulinologyTM is the blending of the disciplines of food science and culinary arts.  By combining the knowledge of basic science with the creativity of culinary arts, students develop a unique skill set that will enable them to define the future of food through the creative process of developing new food products.

WHAT SHOULD WE FOCUS ON?

The answer to this question is contained in Clemson's academic plan which is comprised of the following three parts 

  • emphasis areas
  • curriculum
  • evaluation and rewards

The primary impetus for change and the foundation for Clemson's Academic Plan is a call to focus our talents, energies, and resources on eight broad "emphasis areas" that foster collaboration and promote the integration of teaching, research, and service.  These eight emphasis areas are...

  • advanced materials
  • automotive and transportation technology
  • biotechnology and biomedical science
  • family and community living
  • general education
  • information and communications technology
  • leadership and entrepreneurship
  • sustainable environment

Each emphasis area will be "niche-based" with dynamic additions and re-directions emanating from collaborative interactions.  In response to Clemson's Academic Planning process the Department of Food Science and Human Nutrition has defined three "niche-based" areas that fit within Clemson's eight emphasis areas.  One of these department focus areas is culinary science.

At Clemson, CulinologyTM ... is integrated into our Food Science Degree program as an emphasis area.  Students choosing this emphasis area take additional culinary focused courses along with their traditional food science courses like food chemistry that have CulinologyTM integrated into their teaching (i.e. the science and art of food emulsions).  Students interested in new product development and entrepreneurship typically choose this emphasis area.
