Zippy Peach Salsa
2 Tablespoons lime juice
1 Tablespoon honey
½ teaspoon minced garlic
⅛ teaspoon ground ginger
2 fresh peaches, peeled and diced
½ jalapeno pepper, seeded and minced
2 teaspoons minced fresh cilantro
In small bowl, combine the lime juice, honey, garlic and ginger; let stand for 5 minutes. Stir in the peaches, peppers and cilantro. Refrigerate leftovers. Yield: 1 to 1 ¼ cups.
Note: when cutting or seeding hot peppers, use rubber or plastic gloves to protect your hands. Avoid touching your face.
