Cookbook is Healthy As Well As Tasty CLEMSON -- The South Carolina Family and Community Leaders have revised their popular South Carolina Cookbook. The new edition features favorites from the original cookbook and 300 new recipes geared to today's health-conscious lifestyles. Low-fat dishes include Slumgullion, Chicken Ciapinna, Sea Garden Chowder, and Wadmalaw Sweet Onions. Some of the traditional recipes are Shrimp-Okra Gumbo, Chicken Bog, Venison Hash, and Fresh Peach Shakes. "Each recipe has been tested for taste and nutritional content, including fat, sodium, calories, and cholesterol. This way people can choose the recipes that best suit their dietary needs," said Tom Mounter, state adviser to the S.C. Family and Community Leaders and Clemson Extension program coordinator in the Department of Family and Youth Development. "I don't think the book will ever go out of print," said Linda Fogle, marketing manager at the University of South Carolina Press, publisher of the cookbook. "The previous nine editions have sold out, and with all the new additions and the revised format, this edition should do even better." Royalties from the book go towards scholarships established by FCL at Winthrop, South Carolina State, and Clemson University. The scholarships at Winthrop and South Carolina State are for students. At Clemson, the scholarship is for a county Extension agent to travel to another state to learn from another Extension agent.
