Thanks to two Clemson Extension specialists, a new video is available that shows a quick, safe way to field dress, skin and quarter whitetail deer. "Whether this is your first year hunting or you've been hunting for 20 years, you will find this video educational and worthwhile," said Rick Willey,Clemson Extension 4-H natural resources specialist. About 30 minutes long, the video is narrated by Charles Ruth, deer project supervisor with the South Carolina Department of Natural Resources, who demonstrates a unique skinning and dressing technique that he perfected during his previous work at a commercial deer hunting plantation. The video also includes a segment on the field dressing of whitetail deer. Hunters need to be especially mindful of time and temperature. "A hunter only has two hours before the meat could begin to spoil, especially early in the season when the weather is still hot," said Libby Hoyle, Clemson Extension foods and nutrition specialist. "This video helps hunters be prepared, so they can quickly get the meat on ice and then to the processor." The video sells for $12.50.
