In the Food Science and Human Nutrition Department, the Creative Inquiry Undergraduate Initiative (CI) allows students to engage in food-related research projects. Emphasis is placed on providing undergraduate students with a meaningful experience that will promote reasoning and critical thinking skills, ethical judgment, and communication skills, which combined will lead to a deeper understanding of the methods of scientific and/or humanities research. Clemson University’s support for the CI team members is interdisciplinary with regard to their curriculum focus on food science, human nutrition and dietetics, and culinary science. Within the department, each faculty member serves as a primary advisor. The culinary science emphasis is divided into three groups of students, who each specialize in a different area of culinary science—culinary nutrition, culinary tourism, and culinary science and technology.
