Clemson’s renowned Blue Cheese is a tasty classic of the South. Produced right here on Clemson’s campus, this artisanal cheese has been making its way into the hearts of cheese connoisseurs since 1941.
Clemson Blue Cheese is shipped year round. However, during summer months, hot weather can cause the cheese to soften. Allow the cheese to firm up again by placing it in the refrigerator upon arrival. This will not affect the flavor of the cheese. With our specially selected vacuum-sealed package, Clemson Blue Cheese has a much longer shelf life and can be stored in the freezer or refrigerator for up to 3 months unopened. Once opened, the cheese will store for up to three weeks if rewrapped tightly and refrigerated. If kept longer, a surface/foreign mold will begin to grow. However, this does not necessarily harm the cheese. If foreign mold appears, simply scrape off the edges and use remaining cheese. Lengthy refrigeration after opening will cause the cheese to further cure and the flavor may become quite strong. To avoid this, wrap the cheese tightly and place in the freezer. Freezing will stop all biological activity in the cheese and does not affect the flavor; however, the texture tends to be more crumbly. Remove cheese from freezer and let thaw in the refrigerator for 1-2 days before serving.
