Validating temperatures inside cookers

Dr. Annel Greene along with Dr. Richard Figliola of Mechanical Engineering and Dr. William Bridges Jr. of Experimental Statistics are collaborating to map the temperatures inside a commercial rendering cooker.

This project is a companion to the project for validating that rendering is sufficient to destroy the avian influenza virus. This study is designed to provide definitive proof to regulatory agencies that 1) the cooker provides sufficient temperature for a sufficient time to destroy the AI virus and 2) there are no cold spots within the cooker below the recommended temperature for the destruction of the AI virus.

This study also will validate sufficient temperature for destruction of other pathogens that may be introduced accidentally, such as the virus that causes hoof and mouth disease.
