Justification: In a predominantly rural county, pest management is a great challenge. In local facilities the usual response to rodent infestation is to call the exterminator. DHEC inspectors attempt to educate food establishment operators in preventing infestation, but have had limited success. Many food establishments in Williamsburg County have not participated in the ServSafe Program even though it has been offered many times.
This grant was designed to offer ServSafe to those establishments with a pest infestation problem. DHEC identified potential sites. The ServeSafe program promotes handling, receiving, storing and preparing food to insure food safety. In addition, a short Pest Reduction Program and handout was added to the original ServSafe Curriculum. The entire Servsafe program not only focused on food safety, but also incorporated pest control at each level.
Impact: Eight facilities were represented in Hemingway and six in the Kingstree area with a total of 22 participants. The class included six hours of food safety with and additional one hour of pest management. DHEC reports that many of facilities participating had improved sanitation scores on their inspections following the class. It was also noted that pest control management has been improved because of the ServSafe class. All participants in the class passed the final test issued to all ServSafe students. Evaluations were positive and reflected knowledge that participants gained. |
