Plant Description:
Chinese water chestnut is an herbaceous perennial that produces edible rhizomes. Culms (above ground stems) are spike-like and can be spongy or hollow. Usually, two basal leaves are attached to each culm. Flowering stalks are in the form of a single spike. Like all species in this genus, Chinese water chestnut is restricted to wet areas.
