Serving Safe Food In Schools
| Name | Gayle Williford | | Situation | School Food Service employees have a great responsibility to the children of the State. Hundreds of children in any school participate in the School Nutrition Program. Food safety should be important to all people at all times. Students, faculty, and staff expect that the food will be nutritious, but it should also be safe to eat. Efforts are made at all levels of School Food Service to ensure that the food is safe. It is important for the School Food Service employee to be taught the skills necessary to keep food safe. School Food Service relies on Extension to train and certify their employees in the Serving Safe Food Program. | | Response | The County Extension Agent responded to a request from the Food Safety Specialist to teach the ServSafe program to School Food Service employees of the Lexington County School District. There were 28 employees in the group. The employee training was held on a staff development day. The
school district paid for the training and required employees to attend all six hours. In the ServSafe program, employees learn about good personal hygiene, temperatures in food handling, correct methods for storing, preparing, and handling food and lastly about cleaning and sanitizing properly. | | Impact | 97% of the employees completed the program and received certification. 93% reported that the information about contamination, receiving food, preparing food and serving food was very useful. As a result of taking the course, ninety-three percent reported they will almost always practice good personal hygiene, use a thermometer to judge food temperatures, reheat food properly and practice proper cleaning techniques. |
