Situation

In Marion County, high school officials recognize the need for Consumer Education classes in the school setting but because of limited school funding this program area has been eliminated from the school curricula. One focus of the Consumer Education program that has been lost is teaching students the importance of good nutrition and how to prepare nutritious meals. The principal at the high school in Marion County requested help with teaching the students how to prepare healthy meals.

Response

A 4-H cooking school was implemented for selected 8th graders. This class met weekly for four months. The first meetings were spent on teaching youth the basic safety kitchen tips and the Basic Food Guide Pyramid. Beginning the second month, youth began learning how to prepare meals. Each week the youth learned how to prepare a dish from the food guide pyramid. With each cooking lesson, youth were taught information from that particular food group.

Impact

After participating in the 4-H Cooking School, 99% of the youth could demonstrate that they had increased their knowledge and skills concerning preparing nutrtious meals. 100% indicated that they understood the importance of a healthy diet, and could associate a healthy diet to a healthy life. 99% of the youth also indicated that they had changed the way some of the meals at home were prepared. None of the students that participated in this program had any cooking experience before taking the class.
