
History
The Cryovac® Retort Lab is a 2000+ sq ft teaching, research and service facility in the Department of Food, Nutrition, and Packaging Sciences at Clemson University. This dynamic teaching, research, and service facility was founded in October 2008 by Professor William Scott Whiteside, who also serves as the lab's director.
The lab provides a wide range of services all at one location, including thermal (retort processing) food sensory evaluation, shelf-life testing, product/package development, and package integrity testing. We are dedicated to advancing the science of food processing, providing hands-on learning opportunities, and facilitating groundbreaking research that helps shape the future of the food industry for acidified and low-acid canned food products.
